This Week’s Menu {April 8-14}

Menu Planning is back! Hurrah!

No more eating willy-nilly, stuffing my face with whatever I want in complete disregard for my health and safety. It’s a good thing too as I have gotten ridiculously fat. Seriously, look for me on the World’s Fattest Blogger episode, coming soon on TLC.

Fatness not being all that important to me, Spring is a great time to rejuvenate in general. The bubby and I are shocking ourselves out of lazy winter hibernation habits with new routines all round. We are talking about buying bikes, making plans for renovating the house, and starting now we are going to eat delicious healthy well-planned meals.

Monday – Pair of Potatto Patties with green salad

Tuesday –  munching at Stitch n’ B!tch

Wednesday –Tuna Waldorf Salad Croissant Sandwiches

Thursday – Poached egg on a bed of sauteed kale take home Pho

Friday –  Bean burritos with corn chips and home made guacamole Leftovers

Saturday – Dinner at a friend’s house

Sunday – Broccoli and Goat Cheese Souffle



Dinner is obviously not the only meal that needs re thinking. Packing our lunches in the morning has been more like Trick-or-Treating the fridge.

So here will be my go-to list of breakfasts, lunches, and snacks for the weekdays. On weekends, all bets are off and I get to  eat whatever I damn well please.

  • Oat meal made with skim milk + berries, or
  • Hard-boiled egg + smoked salmon, or
  • Vegan Fruit Smoothie
Morning Snack:
  • Fruit
  • Soup, or
  • Green Salad
Afternoon snack:



  • Nuts, or
  • Humus n’ pita, or
  • Veggies, or
  • Crab sticks, or
  • Low-fat cheese
  • Chocolate milk, or
  • Sugar-free pudding, or
  • Sugar-free jello , or
  • Yogurt, or
  • 4 marshmallows
